- 24 Oreo cookies
- 1/4 cup (55g) unsalted butter, melted
- 16 oz (450g) cream cheese, softened
- 1/2 cup (100g) granulated sugar
- 2 tsp vanilla extract
- 1 cup (240ml) heavy whipping cream

- Crush the Oreo cookies in a food processor until finely ground.
- Add melted butter to the cookie crumbs and mix well.
- Press the mixture into the bottom of a 9-inch (23cm) springform pan, making sure it's packed tightly.
- In a large mixing bowl, beat the cream cheese until smooth and creamy.
- Add the sugar and vanilla extract and continue to beat until well combined.
- In a separate bowl, beat the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.
- Pour the mixture over the Oreo crust and smooth out the top with a spatula.
- Crush some more Oreo cookies and sprinkle them on top of the cheesecake.
- Chill in the refrigerator for at least 4 hours or until set
